Simply freeze the food pan overnight and insert the pre-chilled food.It fits all standard full-size food pan templates. These things are good but they don't keep the food cold as you need on warm days even if you add ice. But if you use steel pans which conduct better and fill the main unit with ice you will be satisfied most of the time.A refrigerator has blowing cold air which improves conduction and these can't quite compete. But if used properly, these can be very effective tools . Keep a lid and chill blanket over them during service lulls.
